Kristen and I here at Culinary Mamas strive to feed our families health food. However, we’re mothers of many and we realize high-end culinary isn’t possible every night of the week. There are nights that revolve around kid activities, homework, bath times and well, let’s admit it – tantrums. The quick weeknight meal use to be just for me and my husband on nights when we came home late from work. Dinner in those days was around 8pm. Now dinner is rushed to the table at 5pm to avoid that tantrum. So, whether you’re following us because you’re a mom or not, hopefully Trader Joe’s meal ideas will help you. I make this Veggie Stir-fry recipe every couple of weeks because it’s a great way to get a rainbow of vegetables on the table fast.
This Veggie Stir-fry is quick and easy because the veggies are pretty much all chopped up. The box contains snap peas, carrots, peppers, onion, 5 slices of mushrooms, and 2 of those cute little corns. Five slices of mushrooms isn’t enough for me and my family so I add more with a Trader Joe’s bag of cleaned and sliced mushrooms. I just chop them a bit smaller. I also break up the large broccoli florets that are included.
Ingredients:
1 tablespoon vegetable or canola oil
1 container of Trader Joe Vegetable Stir-fry
1/2 a bag of sliced mushrooms
4 cloves of garlic
2 tablespoons Trader Joe’s Soyaki or soy sauce
Chop any large veggies like broccoli into smaller pieces. Heat oil in a skillet or wok on medium-high. Just as the oil starts to shimmer add garlic then add all the vegetables and stir. Cook while continuously stirring for about 5 minutes. Peas and broccoli will turn a bright shade of green. Add the Soyaki sauce and give it one last stir. Serve over rice.
