Don’t like tofu yet? (Ahem, Kristen.) Then try this recipe. I started both my kids off eating cold soft tofu, then started them on butter fried tofu, now they snack on these teriyaki tofu bites. They’re bite size, chewy and full of flavor. It’s a great protein snack for kids. Why wouldn’t you try them? It’s easy to make.The ingredient list is well, the shortest ever. These little bites are also versatile. Eat them as a snack or add them to your favorite veggie stir-fry. Kristen, will you let us know if your kids like them?
1 package of firm tofu
1/3 cup Trader Joe’s Soyaki sauce
Slice the tofu in 1/2 inch rectangles. Press all the water out of the tofu. Do this by taking a cutting board and layering it with a couple of paper towels. Place the tofu on them, then put another double layer of paper towels. Top it with another cutting board and weight. I weigh down the top board with my heavy cast iron pans, but you can use canned food. Press the water out of the tofu for about 15-20 minutes. Trader Joe’s high protein tofu has less water content, but if you’re using regular firm tofu you might need to replace the paper towels once. Removing the water content helps brown the tofu and make it crisp.
Stack all the slices back up and cut them into 1/2 inch sticks and then even cubes.
Preheat oven to 350°. In a bowl, mix the tofu with sauce and marinate for 20 minutes. Spread tofu evenly on a rimmed roasting pan. Bake for 30 minutes, tossing half way through. Let cool before serving.
