This is a quick an easy recipe that can enhance the flavor of many more recipes. Having a jar of these pickled onions in your fridge can be very useful for garnishing sandwiches, salads and tacos. I have an upcoming recipe for slow-cooked carnitas tacos that taste fabulous with these onions on them. I love the sweet n’sour taste of these onions. They can become addicting. I’ve found myself putting them on crackers with cream cheese as a way to consume them.
1/2 cup red wine vinegar
1/2 cup water
2 tablespoons sugar
1/2 teaspoon salt
1 bay leaf
1 large red onion (peeled, sliced and divided)
In a small sauce pan, bring the vinegar, water, sugar, salt and bay leaf to a simmer. Stir and make sure the sugar and salt has dissolved. Place all sliced onions in a jar and pour hot liquid over raw onions and let cool completely. Refrigerate for at least an hour or even better over night.
