Pickled Red Onions

Top, sandwiches, tacos, and salads with these delicious onions.
Ingredients
  • ½ cup red wine vinegar
  • ½ cup water
  • 2 tablespoons sugar
  • ½ teaspoon salt
  • 1 bay leaf
  • 1 large red onion (peeled, sliced and divided)
Instructions
  1. In a small sauce pan, bring the vinegar, water, sugar, salt and bay leaf to a simmer. Stir and make sure the sugar and salt has dissolved. Place all sliced onions in a jar and pour hot liquid over raw onions and let cool completely. Refrigerate for at least an hour or even better over night.
