Poppy Seed Dressing

Happy Spring! ‘Tis the season to enjoy strawberries. My favorite dressing on strawberries is this poppy seed dressing.  Below is a great combo of mixed greens, strawberries, avocado and toasted almonds with the poppy seed dressing.  In fact, this dressing is delicious on any salad. Another couple great combos are spinach, strawberries, and red onion or spinach mandarin oranges, and red onion.

I recently bought avocado oil for the first time and it was a lovely addition to this dressing (I usually use canola oil). Avocado oil is high in monounsaturated fats and vitamin E, but also helps your body absorb carotenoids and other nutrients, which is awesome when you have it on vitamin packed salad.

1 tablespoon finely minced or grated onion
1/4 cup white wine vinegar
3 tablespoons sugar
1/4 teaspoon salt
1/4 – 1/3 cup avocado oil or canola oil
1 tablespoon poppy seeds

Pulse onion in your food processor or blender until finely minced. Add vinegar, sugar, and salt. While you have the processor or blender running add the oil. Pour into a jar and add poppy seeds. Shake just before serving.
