It’s a hot week here in Seattle. Yes it might only be the 80’s, which sounds easy to most of the country, but we don’t have AC here. Therefore this week calls for sprinklers and popsicles. This popsicle recipe is packed with sweet fruits, creamy yogurt and a bit of veggies. I love it when my kids think they’re getting a treat but really it’s still healthy. These tropical orange popsicles are based on one of my favorite smoothies. If you want to try it as a smoothy, just substitute orange juice for orange concentrate. I love keeping my freezer stocked with Trader Joe’s frozen fruit for recipes like these. They’re already, peeled, chopped and ready to use.

1/2 cup pineapple chunks
1/2 cup mango chucks
1/2 cup banana (about 1 small)
1/4 cup shredded carrots
3 Tablespoons orange juice concentrate
1/2 cup plain yogurt
Blend all ingredients in a blender until the carrot shreds are unnoticeable. Freeze in popsicle molds over night.
