This Memorial Day weekend we enjoyed a S’mores Ice Cream Pie. It’s a perfect merger of summer camping memories, ice cream and birthdays in our home. My son turned 5 this weekend (sniff – my baby is so big now). I find every year I force a tradition of an ice cream pie for the family dinner on his actual birthday. There’s always a regular cake or cupcakes at a kiddy party, so more of the same doesn’t interest his father and me – selfish I know, but luckily the kid might love ice cream more than cake. Since my son’s favorite thing about camping is s’mores, this pie was perfect for his birthday sweet tooth. Ice cream pies are super easy to make and a great start to summer on a holiday weekend. Don’t cheat and buy a graham cracker pie crust – I’ve tried. It’s easy enough and it makes a huge difference in the end taste. To make the graham cracker crumbs, pulse the crackers in a food processor. The recipe tastes great with Hershey’s chocolate, but also superb with dark chocolate. Use whichever brand of vanilla ice cream you like, but you can cut some calories by using frozen yogurt or Dreyer’s Slow Churned. I usually make this the night before, but the morning of for a dinner dessert will also be enough time.
1 1/4 cup graham cracker crumbs (about 1 package)
1/2 cup sugar
1/3 cup butter, melted
4 cups vanilla ice cream or frozen yogurt
2 cups mini marshmallows
6 ounces of your favorite chocolate, finely chopped
Topping Options: whipped cream, extra graham cracker and chocolate pieces
Take ice cream out of the freezer to soften. Butter the bottom of a 9 inch pie pan.
Mix graham cracker crumbs and sugar in a bowl, then add melted butter and combine until the crackers and sugar are wet. Press the mixture evenly into the bottom and sides of the pie pan. Put it in the freezer while you chop chocolate and prepare filling.
Mix, ice cream, chocolate, and marshmallows. Spoon the ice cream mixture into the frozen crust. Freeze until firm. Soften for about 10 minutes before
slicing and garnishing with extras.
