Today I am going to share the “his” sandwich in his and her sandwiches. Tomorrow you get the “her” sandwich, the vegetarian sandwich that will make you want to give up meat forever, or at least just for lunch that day.
My husband, Cory, created his heaven between two slices of bread last summer, the BLT perfected. It starts with your basic BLT, but he then adds an egg and avocado and we call it the California BELT. Or, he adds an egg (over-easy) and some basil and fresh mozzarella and we call it the Easy Caprese BLT. It is simple, but often our greatest culinary experiences come at the hand of only a few ingredients. Cory and I were going out to a fancy restaurant last weekend for our anniversary and we had the ingredients for these sandwiches in our fridge. I almost didn’t go, my craving for the oozing egg, crisp bacon and soft avocado almost won over the need for some fancy anniversary dinner. And as a bonus, the lettuce, tomato, and basil came straight from our garden.
The children love these. The addition of the egg makes the sandwich appropriate for breakfast, it is still easy enough to call lunch and it is filling enough to be dinner. We ate these last week for our Sunday dinner. It’s a big deal around here to take that treasured spot in the dinner rotation.
One tip: A sandwich is only as good as your quality of mayo. Hellman’s, also branded Best Foods in different parts of the country, always wins tastes tests. You can buy it in embarrassingly large jars at Costco.
Easy Caprese BLT
For each sandwich:
2 slices of best quality white or wheat bread toasted (we use Great Harvest here) or Udi’s Gluten Free Bread.
2 slices of bacon
1 crisp lettuce leaf
1-2 thick slices of fresh mozzarella cheese
4 basil leaves
1 egg
Mayonnaise
Spread the mayonnaise on the bread thick. Assemble the sandwich with the bacon, lettuce, mozzarella and basil. Fry the egg and then place it on top of the prepared sandwich so that it is piping hot when you take your first oozing bite.
California BELT
For each sandwich:
2 slices of best quality white or wheat bread toasted (we use Great Harvest here)
2 slices of bacon
1 crisp lettuce leaf
Four slices of avocado
1 egg
Mayonnaise
Spread the mayonnaise on the bread thick. Assemble the sandwich with the bacon, lettuce, and avocado. Fry the egg and then place it on top of the prepared sandwich so that it is piping hot when you take your first oozing bite.
