Tips & Tricks: Ripe Bananas What do you do with that spotted, brown, almost black banana? Leave it ’till it becomes one with the fruit basket? Compost it? In our house I usually hear “time to make banana bread.”  However, those browning bananas never time themselves with my schedule to bake. This tip & trick is the easiest thing to solve that. Just peal said browning banana and put it in a freezer bag and freeze it. When it’s time to bake just defrost the bananas!  I do have to admit most times the kids have smoothies with the frozen bananas before I even get to make banana bread. frozen bananas Don’t have a ripe banana and your schedule allows for some baking? Just place the under-ripe bananas on a baking sheet and roast them at 350° for 15 minutes. The browner the banana the higher the sugar content. In fact, bananas are picked green. If they ripen on the tree they loose their taste and are mealy. So ripening on the counter provides that extra sweetness that we love and is perfect to bake with.
