‘Tis the season for apples and pumpkins. This microwave apple crisp recipe is for all of you who are busy, but still want to be a part of the season and have the aroma of apples cooking wafting through your home. This is a recipe my mother-in-law armed me with as a new wife. It comes out regularly, because it couldn’t be easier. You don’t even have to warm up the oven. Consider making it year round – it’s easy. I used a mixture of green and Fuji apples but almost any would do.
As always the little ones are looming near to this culinary mama’s kitchen prep. She just couldn’t resist a bunch of apple slices. I think I actually only cooked 5 not 6 cups in the end. I guess that’s what happens when you use her kiddy table for photo set up.
6 cups apples, peeled, cored and sliced about 1/4 inch thick
2/3 cup quick cooking oatmeal
1/3 cup all-purpose flour
3/4 brown sugar
1/2 tsp nutmeg
1/2 cinnamon
1/4 cup margarine or butter
Place apples in 2 quart or 8″x8″ bakeware.
Combine remaining ingredients in a small bowl except margarine/butter. Cut the margarine/butter in with a fork until crumbly. Sprinkle over apples.
Microwave 12-16 minutes on high until apples are tender.
