Summer will be here soon and the lust for cold treats will be calling…. Let’s face it, we should all have something healthy to reach for in the freezer besides a tub of ice cream. In my house that’s a year round battle. The 10pm dessert ice cream call is a vicious cycle. These frozen banana pops are a healthy alternative – just as sweet and cold as ice cream. They make a healthier frozen treat for children and I plan to have these on hand this summer for afternoon snacks or desserts.
Plain chocolate is great, but you can also add coconut flakes, nuts or sprinkles. You can guess which one my test subject requested.
8 popsicle sticks
4 bananas
2 cups semi-sweet or dark chocolate chips
1/2 cup or an assortment of the following: chopped peanuts or walnuts toasted coconut sprinkles
Peel the bananas and cut them in 1/2. Stick them on the popsicle sticks. Prepare toppings by scattering them on a plate.
Melt 1 cup of the chocolate chips in a double boiler or a homemade version like the one above, simmering on low. You can microwave chocolate, but I prefer a double boiler so that I can constantly stir the chocolate and keep from overcooking it. Not sure you’re overcooking it? Once it melts, if it starts to get lumpy and starts to thicken, then you’ve burnt it. So I suggest that you melt only one cup of chips at a time and add more in as you work to coat the bananas.
Coat the banana by dipping it in the melted chocolate and wrapping or spooning the chocolate around the banana with a spatula. Roll the chocolate coated banana in the topping of your choice. Place it on a baking sheet and freeze for 2 hours or over night.
