Chunky Monkey Blondies

Ingredients
  • 1 cup of unsalted butter
  • 1½ cups brown sugar
  • ½ cup white sugar
  • 2 eggs
  • 2 cups flour
  • ½ cup banana, mashed
  • 2 teaspoons vanilla
  • ¼ teaspoon salt
  • 12 ounces chocolate chips
Instructions
  1. Heat your oven to 350 degrees. Butter a 9 X 13 pan and set aside.
  2. In a medium saucepan, melt the butter over medium-low heat. When the butter has melted, stir in the brown sugar and take the pan off the heat. Stir in the white sugar. Add the eggs one at a time, stirring to incorporate after each addition. Add the flour one cup at a time. Stir in the banana if you are using it. Stir in the vanilla and the salt. Add the chocolate chips. I like to reserve about ½ cup and sprinkle them on top of the batter once it is in the pan. Pour the batter into the pan and bake for about 20-25 minutes until golden and just a touch golden-brown around the edges.
