Cauliflower Brain

Need a scary snack for Halloween or a side for your family get together? This cauliflower brain is simple, fast and as disgusting as the name you can come up with for it.
Ingredients
  • 1 large cauliflower, or 2 small cauliflower
  • 1 cup milk
  • 1 tablespoon corn starch
  • 2 tablespoons butter
  • ¼ teaspoon salt
  • pinch of pepper
  • 1½ cups shredded cheddar cheese
Instructions
  1. Place 2 inches of water in a large saucepan. Heat over high until the water is boiling. Add the cauliflower, stem side down. Place the lid on the pan and boil for 20 minutes or until the stem is soft. Remove the cauliflower from the pot and let the water drain onto paper towels.
  2. While the cauliflower is boiling, make the cheese sauce. In a medium saucepan, stir the cornstarch into the milk and continue to stir while you heat over medium heat. After a few minutes the mixture should thicken. Remove from heat and add the butter, salt, pepper and cheese. Stir until combined.
  3. Turn your oven to broil. Place the whole cauliflower on a greased cookie sheet and pour about half of the sauce over the cauliflower. Broil for about three minutes or until some of the sauce turns golden brown. Remove from the oven and display.
  4. For ease of eating, I like to cut the cauliflower into smaller, bite-size pieces and return to the cookie sheet. I pour over the remaining sauce and broil for a couple more minutes.
