3 Tablespoons green onion or chives, finely chopped
2 Tablespoons dill, chopped
2 Tablespoons freshly squeezed lemon juice
3-4 radishes, sliced (optional)
Instructions
Thinly slice cucumbers by hand or with a mandolin. Sprinkle 2 tablespoons of salt on the cucumbers and mix well. Let the cucumbers soak in salt for about 20 minutes. Ring out accumulated cucumber juice. The cucumbers don't have to be dry just a good amount of juice removed.
Mix sour cream, sugar, mayonnaise, green onions, dill and lemon juice in a small bowl. Combine the dressing with the wrung out cucumbers. Store in the refrigerator for at least of an hour before serving. If you're adding radishes do so just before serving.
