Curry Pea Salad

This is the best potluck recipe. How do I know? I discovered it at a preschool potluck. The fellow mom and friend who brought it was eager to share her highly successful dish – thank you Jamie. It was a recipe her mother-in-law shared with her. The original title of the recipe is “Peas the Way You Can Love Salad”. Says a lot about this winner!

My husband and I have enjoyed this curry pea salad time and time again this summer. It goes great with almost any meal. It’s rich with flavor from the onions, curry and the lemony dressing. Jamie’s original recipe had a sliding scale of 1 cup of oil or less. I prefer more acidic dressings, so I adjust it down. If it’s a nut free potluck, know it still tastes great with sunflower seeds instead of almonds.

16 ounce frozen peas
1 large bunch of green onions thinly sliced
1 can water chestnuts, drained and quartered
1- 6 ounce can hickory smokehouse almonds, coarsely chopped

Dressing:
2 teaspoons curry powder
2 teaspoons lemon pepper
2 teaspoons freshly squeezed lemon juice
2 teaspoon white wine vinegar
1 teaspoon freshly ground black pepper
1 teaspoon kosher salt
1 teaspoon sugar
3/4 cup vegetable oil

Shake all of the dressing ingredients in a jar with a tightened lid. Toss peas, onions, chestnuts, and almonds in a bowl. Pour dressing over salad and chill for several hours or overnight.
